Method: Disperse the xanthan gum in water heated at 50°C. After homogenisation, add the phase B and heat with stirring until 75°C. Maintain the temperature for a few minutes, then cool the blend with slow stirring. At 40°C, add the preservatives and the phase C. Adjust the pH to 6 with lactic acid solution if necessary.
